twin plates

We've got a single cheater plate set up on a BBC with 200hp of nos added....we're now going to add another plate straight on top of the existing setup (cos we had it lying around) and use it for top end charges via a steering wheel button....used after second gear pull....
Now the question, at present we only have 5 degrees taken out for the 200 hit and we are not experiencing detonation.......do you think we can get away without pulling anymore timing out if we hit the second stage mid way through second gear?
I do realise the recommended retard is 2 degrees for every 50 but is this just a conservative figure used to preserve the NOS reputation or are we looking for trouble by not pulling any timing?
