Spaghetti Under The Hood......HELP !!!!

I have a '90 GT. I am going from EFI to a carb setup. I want the spaghetti under the hood GONE! Will I be able to unplug the entire EFI harness at the computer? If I do, what regular systems such as gauges, elect. windows, heater, air bags,radio, etc. will be shut down. The A/C has already been eliminated. If I can't unplug at the computer, whats the best way to get rid of the wiring mess? I want to keep all the creature comforts working. THANKS FOR YOUR HELP!

pull it you will be fine , the only thing that will not work all the stock gauges and the air bag everything else is in another harness i am not sure about the heater ..

Thanks......I noticed that there are more connectors coming off the main harness just before it enters the computer and running up into the dash.might these connectors be the ones running back to the gauges?
