bellhousing pivot ball adjustment

how do i determine where the correct height is for the pivot ball for the clutch fork in the bellhousing?

is this something that has to be done before the trans is bolted up to the bellhousing or can the bellhousing be fabricated(cut) so you can adjust it when everything is bolted up under the car?
